Cook Extraordinaire!...not


I enjoy cooking. I enjoy eating far more, but I do like cooking and starting with a bunch {or a little} amount of stuff and seeing eating the end result. It gives me a sense of accomplishment. The other side of that is that I really enjoy cooking meals that take me about 15 minutes or less of preparation.  For the past 2 nights, I've been able to get everything {essentially} ready for dinner in probably 10 minutes or so. My secret for accomplishing this in Night 1 was the all powerful and wonderful crock pot.  Night 1's meal was beef stroganoff {made with turkey meat}, so once the meat was browned, I added about 3 cans of Campbell's Cream of Mushroom soup, a splash worcestershire sauce to the crock pot {also, sour cream is optional, but a great addition} and let it cook until Andrew got home. And voila! A wonderful meal that took 15 minutes or less of total preparation.

Night 2's meal {tonight} is a delectable dish called Mexican Mac & Cheese. This one is simple and good no matter what! And the best part is that it's almost fool-proof. After browning your mean {I used ground chicken}, set it aside and prepare the mac & cheese; I personally prefer Velveeta Shells and Cheese, because it's quick and easy, and let's face it, a household favorite. Once your mac & cheese is complete, add the meat, a cup of salsa and a 1/2 cup of frozen corn. Mix it all together and you're ready to go! While this one may take a little longer in prep time, it's still quick and easy.

 So for all you readers on the go or just don't want to spend a lot of time on cooking, I strongly suggest either one of these. They also re-heat great so you can enjoy these meals multiple times. Really, this is a win-win situation! Happy cooking!
